We explored over two seasons the metabolite profiles of potato seed tubers from four contrasting cultivars, produced from a single field and stored at different temperatures for six months. Employing untargeted metabolomics, we provided a comprehensive overview of changes in tuber metabolic profiles, revealing consistent treatment effects across storage seasons. The number of detected metabolites gradually increased throughout storage, particularly at higher temperatures. Multivariate analyses, including principal component analysis and factor analysis, highlighted cultivar-specific metabolic profiles and pronounced effects of storage time and temperature. These findings offer valuable insights into the metabolic dynamics of potato seed tubers during storage and establish a foundation for understanding the biological functions of key metabolite groups in the physiological ageing process of seed potatoes.
